homemade vegetarian Quesadillas + gf wraps


hey you all!


message from last Tuesday:

I just got my braces installed and it's been hurting kind of pretty bad. I don't really eat a lot, because my teeth hurt just if I touch them. so... taking Tylenol!

On a happier note, today we're making one of my fav recipes in the world, are u ready? ... QUESADILLAS !!! these are just highly exclusive since:

the wraps are homemade and gluten free

they're also really easy to make

the filling is made out of beans, so it's vegetarian

the added paprika to the filling makes it super tasty

you'll just be extremely proud once you've made your own wraps and inside!

The wraps are from the Against All Grain cookbook by Danielle Walker, and the quesadilla filling from the Gluten Free Women's Weekly Australia cookbook. it's really amazing!


you can use commercial wraps as well, if you find gluten free ones ( or if you don't mind gluten, normal ones )

Gluten-free wraps


INGREDIENTS:

6 large eggs, beaten

1 cup almond milk

6 tbsp gf flour

1/2 cup tapioca/arrowroot starch

2 tbsp melted coco oil

pinch sea salt

coco oil, plus, for the pan

INSTRUCTIONS:

heat a saucepan to medium high heat

whisk together the eggs, milk, flour, starch, oil and salt. let the batter sit for 10 minutes, then whisk again.

melt a small amount of coco oiling the preheated pan and spread it all over.

add 1/4 cup of the batter on the hot pan and quickly spread it over to create an 8 inch circle, when the sides begin to lift, turn the other side, until the same thing happens, (cook less time the second side)

then transfer to a plate and continue the same cycle until there's no batter left.

Quesadillas:

INGREDIENTS:

400g canned black beans, drained and rinced

1 1/2 tsp smoked paprika

1 cup grated dairy free cheese ( or cheddar if you can tolerate dairy)

2 green onions (scallions) sliced thinly

gf wraps

INSTRUCTIONS:

combine beans and paprika in a medium bowl and using the back of a fork, coarsely mash. add cheese and onion, mix well and season.

place wraps on a clean chopping board, add filling on half the wrap, fold the non-filled side on the mixture and carefully place in saucepan, heated to medium-high heat. press with a spatula and cook for 5 minutes or until the sides start to become crisp and brown. when the tortilla has become thin, flip sides and do the same routine only for a shorter time. transfer to a plate and repeat with remaining quesadillas.

cut them all in quarters or halves if you like and accompany with lime and coriander.
