Leftover Veggie Soup 🥕
Let me just start by saying this soup is a miracle. I love any soup, so you might take that as an argument, but I'll still beat you with all of those lovely tastes.
Combine all your leftovers, leaving no ugly veggie behind, to make them into the most beautiful and delicious entree or meal. it's colour will make you want more, the taste will delight your tongue and your mind.
I love to eat this during lunch when I'm in a rush, or when having friends over, this makes a nice entree.
I didn't add measurements for this recipe since you can switch it with what you have in your fridge. Feel free to add your own touch to the soup!
You could really just pop all leftover veggies in your blender and this would still be a success. (well, there's a limit. but...) go crazy with the ingredients if you want. I mean, whatever's in your vegetable reserve is fine.
It's also great way to make your kids (or yourself;) to eat vegetables, without really noticing it.

Well, I think that's it for the bla bla, so let's get going for the easiest leftover soup!
- orange pepper
- organic chicken broth
- salt and pepper
- sunflower sprouts
- pumpkin seeds
- seer the vegetables with oil in a saucepan. then cover with broth.
- blend all the ingredients in a blender (I use Vitamix)
- then place mixture in a big pot to warm up.
- serve when the soup is at the right temperature to eat, so hot.
- sprinkle with salt and pepper to taste and add sunflower sprouts and pumpkin seeds as you enjoy.
