Easter Quinoa Crispies


Happy Easter everybody!

Hope you're enjoying the long weekend, the holiday and time with your family!

Today on the blog, I'm sharing a delicious recipe; Quinoa Crispies. I call them that way since they look and taste like rice crispies, but they instead of the rice cereal, I use quinoa puffs.

And I know what you might be thinking: "Geez, isn't marshmallows not god good for you? Why is this recipe on a healthy blog?" Well, the answer is, sometimes, it's okay to cheat. Sometimes, you can enjoy a kind of crazy dessert. Only if you listen to your body. If it's telling you: Go for it! You're fine, you deserve it. Then you do!

So the recipe was inspired by a few, ideas from here and there to create a simple delish. Lick your lips. it's about to begin!


Ingredients:


  • 1/4 cup coconut oil

  • 4 cups Mini marshmallows

  • 2 tsp vanilla extract

  • 2 cups Quinoa Puffs (I used "Gogo Quinoa" brand)

  • 4 tbsp cup Pastel coloured sprinkles (optional)

Instructions:

-1. In large saucepan over low heat, melt coconut oil. Add marshmallows; stir until melted and well blended. (It will never be completely melted, wait until it's all together, and has a mushy texture) Remove from heat.

2. Stir in vanilla. Add cereal and sprinkles, stirring until coated.

3. Using your hands, or fillable plastic eggs, form small oval eggs.

4. Refridgerate for 10-15 minutes and savor when desired!
