lovely pumpkin parfait


Hello peeps!

BTW, congrats for making it to Friday, you are all incredible! This week I'm sharing an easy recipe using my favorites on the blog. This pumpkin parfait might suprise you as its beautifulness (if that's a word) will shine through your glass, and make your elated smile stand out.

This beautiful parfait is made with my coconut chia pudding, my tango-argousiers smoothie and pumpkin puree. remember if you would like to experience the taste those goodies uniquely, don't hesitate to eat it differently. Ingredients:


Coconut chia pudding:

----------------------------

-2 1/2 cups of coconut milk (625 ml)

-1/3 of a cup of chia seeds

-1 teaspoon of vanilla extract

-2 tablespoons of raw honey or maple syrup

Argousiers Smoothie:

-------------------------

- 1 1/2 cup mangoes

- 2-3 tbsp argousiers

- 1/2 cup almond milk

- 1 tbsp coconut sugar (optional)

Pumpkin Puree:

-------------------

You can either make your own, but I got you overwhelmed peeps, you can absolutely buy canned puree.


Instructions:


Coconut Chia Pudding:

---------------------------

Place the coconut milk, seeds, vanilla and honey in a large bowl. Mix and cover, then place in the

fridge for 1-2 hours or overnight until thick.

Argousiers Smoothie:

-------------------------

- Mix all the ingredients in a blender.

- Add more milk if necessary.

- Scrape the sides every 10 seconds.

Assembling:

---------------

- In your fav jar, place the pumpkin puree in the bottom, then when you feel you have enough, add the pudding, to finish up, add the last layer, smoothie. And I mean, to put it in a jar is real cute, but no judging girl, you can put it in a bowl.
